Here [ ] is a greater than sign between two brackets

it seems to be fickle, I can cut and paste them in like this [>]

Really? Did the [>] sign appear correctly in the input box before you posted it? How odd. What about [<] (less-than) signs?
Typing a greater than on the first line shows the character until you type a subsequent character, at which point the greater than disappears and the first line gets turned into quoted text. The square braces are not necessary, any character will do.
[<] can be typed fine
Oh I see the behaviour now. The odd thing is that you can type [>] between square brackets, which is how I didn't notice while typing the previous post.
