It's software development. Things don't always go as expected, and it can start to make more sense to skip a release for a later one. It's not something you want to have people trying to hit release deadlines as the main motivator.
Sometimes they will skip a version release for the next release - maybe due to a bug with production or in this case maybe the holiday offset the release.
So 10-15 business days with the understanding is that if something egregious is going on in the sandbox a note saying delays due to (computer equivalent to red signal/signal failure/debris on the tracks) would give morale, unless a big update is forthcoming.
Communication is everything. Communicate, the pitchforks get left in the shed. Otherwise. ...
Niantic has long since given up on any communications outside of the absolute bare minimum. I honestly wonder if they even understand how much it would benefit them.
Why, though? What would be the end result of that effort? The outcome will be the same, in the end, users won't be on a newer build. Why take their focus away?

Why make posts like this? It will be released when it's ready to be released.
It's actually strange. They say the release cycle is 2 weeks, but sometimes they skip updates or change weekdays. Would be nice to have more insight.

Do understand that 2 weeks was never a guarantee.
