There's what's been called the "previous universe" by some. Essentially, our universe is part of a domino-like effect where one universe shunts excess XM into another universe, causing an Epiphany Night in that particular universe. The "previous universe" (no other name given, just yet) that forced this XM shunt into our universe is what caused our Epiphany Night back in 2012, and we ultimately caused a similar Epiphany Night to happen to the Niantic researchers in the Prime/Osiris universe. Presumably Prime/Osiris will do the same to another.
Overall there are potentially infinite numbers of parallel "universes" that are concencted in a multitude of ways. We know of a few connections but most are unknown to us.
One connection that we know of is (as @Ishira mentioned) the Epiphany-Night-Eventseries that connects the "previous universe", our universe (labeled 1218) as well as 1218 to the "Osiris" universe.
Another Connection is the RPE's (more on that later)
In general, the universes that we know or that we've interacted with are very similar (in the sense that they follow the same rules of natural science and - mostly - the same historical progression). They are NOT identical though, they often differ in how certain events turn out and what decisions some people made. Imagine them as "different timelines" (defined by the collective permutations of decisions)
RPE's for example allow us to project our consciousness into the physical body of another being (that was used to explore other universes and timelines - "what-if" - style). The Issue with that is that for the most part we're unable to chose which universe we go to. In the "Osiris Epiphany night event" a special artifact was used to override that and allow targeted RPE into the Osiris universe.
A number of specific universes are known (and were given a special name):
"the previous universe" - a dimension that on a global time-scale discovered XM before us and caused our epiphany night. That event opened a gate between the two and flooded our universe with xm.
1218 - our universe. Named after the year 2012, in which our own epiphany night took place and in which the "redacted"-Scanner game took place. And also named after 2018, the year in which we've reached enough advancement in xm tech to cause an epiphany night event in another universe to save our own.
Osiris - a the universe that "Ingress Prime" takes place in. A notable difference to our universe is that time flows faster, thereby making it seem like events that were years apart in our universe were mere months apart in theirs.
"The Animation" - the universe that the Anime takes place in.
For the connections, right now are they only linear (like a single link) or are there "starburst" universes that link out to multiple universes? And as a side, is someone "linking, fielding, starbursting" universes for an even larger meta picture?
@Lucoire I am uncertain - probably need a separate discussion for that just to keep things from mixing and because the nature of connectedness intrigues me and I admit I do not have a strong grasp on how everything is connected ... my initial comment was more addressing the concept that our Epiphany Night Affected Prime and some other universe's "Epiphany Night" affected us...
@docwho2100 My point (and the point of that wall-of-text) was to illustrate that the "Epiphany Night Event Series" is just one of potentially infinite connections. Sure, opening a gate to another universe and flooding it with xm is massive but so is using the prime-scanner to interact with anomalous zones in that universe on a scale large enough to change the outcome of that anomalous event.
With the opening of the Myriad registration pages, we seem to have confirmation of the Nemesis universe. One of the medals being given away is for a "Victoria Kureze". Previous leaks on PAC Prime's site have confirmed that Kureze Prime is male.

@docwho2100 RPE'ing would count as temporal starbursts, right?

In which universe is Oliver Lynton-Wolfe being represented by Olivia Newton John? ;P
